BTEC catering for staff CPD
Well done to all the Y12 BTEC Hospitality students who took part in the evnt catering for the staff and lunches this week. They worked in 4 teams to make the food and each team prepared and cooked a different style of food to serve around 150 people.
Red Team – Indian
Fish Tikka, Onion Bhaji Basmati Rice and Riata
Blue Team – Mexico
Chili Con Carne Taco’s, Cheese Quesadillas,
Corn on the Cob and Salsa
Yellow Team – Caribbean
Lime and Chili Chicken, Sweet Potato Chips and Pineapple Salsa
Green Team – Mediterranean in Salad Bar
Seafood Pasta Salad
Pesto Penne
Greek Salad
Honey Lemon Dressed Salad Leaves
The feedback was excellent from all the people that tried it and it was great to see how much the pupils enjoyed cooking and serving and how they found it rewarding getting the positive feedback, which is great as they gave up their day off. The students will all now be rewarded with a posh meal out as part of the research for the next event
Star Baker – Katherine Nye
Congratulations to Katherine who has been out sourcing her talents and as part on her BTEC extended project on cake making has paid to make this fabulous cake for a dog’s birthday. The cake had yo be low fat and low sugar, so it could be enjoyed by both humans and dogs, with caused a few problems, but after researching hard Katherine found great cake and icing recipes and pulled off a great design.
Applied Learning Celebration Catering
At the applied learning celebration evening, the food department was asked to serve some nibbles. This seemed like the ideal opportunity to start planning for the introduction of BTEC Hospitality next year, by getting the students that have opted for this new subject together to do this . I was very impressed with both the creativity in designing the canapes and the collaboration and team work of the students and am very much looking forward to teaching this class next year.
Y13 BTEC Business – Apprentice Baking challenge
As part of the Y13 BTEC Business studies course, the students were split into 3 teams and each team was gioven $300 to spend on ingredients and materials and were given a stall at the winter fare. They were then asked to go away and plan there stall and were given a 3 hours slot in the food room, to make their products.

The Baking Boys and decided to make Triple Chocolate Brownies with fudge sauce.
Gumdrop buttons making Cupcakes
Puff flex making sweet and savory pasties.
The baking was on the whole a great success, with only Puff flex encountering any problems, as some of the sweet white chocolate pasties had quite a bit of leakage and therefore could not be sold. Gumdrop buttons, worked excellently together and produced high volume of consist cupcakes, very good collaboration. The Baking Boys produced a high quality luxury product which they then cleverly packaged.
At the winter fare The Baking boys sold out first with there 35 portions of brownies being very popular,The Cupcakes being sold for $10 each sold at steady pace and eventually sold out, but the pasties, didn’t quite sell out and they had a bit of waste from the exploded chocolate pasties.
All profits were going the Masarang Foundationon and after they had repaid their $300, paid their stall rent the final totals were

This makes The Baking boys the winning team in terms of profit, but Gumdrop Buttins, won the teamwork award.
