Y12 DT/Food Chocolate project
This week saw the culmination of the Y12 chocolate design project, where pupils sold there products at the winter fare. Pupils and been working groups mixed with both Food and DT students and had design and branded their own chocolates, by 3d printing the shapes, vacuum forming the molds and then tempering the chocolate and packaging the finished products.
The product all sold out very quickly and we could ahve sold alot more with more time to make them.
After all ingredients, material and the stall rents have been deducted the profits were donated to Masarang foundation. Below is the amounts each team made.

Well done to all groups, as they all worked extremely well together and made high quality products. We will definitely be running this project again next year.
Y13 BTEC Business – Apprentice Baking challenge
As part of the Y13 BTEC Business studies course, the students were split into 3 teams and each team was gioven $300 to spend on ingredients and materials and were given a stall at the winter fare. They were then asked to go away and plan there stall and were given a 3 hours slot in the food room, to make their products.
The 3 teams were
The Baking Boys and decided to make Triple Chocolate Brownies with fudge sauce.
Gumdrop buttons making Cupcakes
Puff flex making sweet and savory pasties.
The baking was on the whole a great success, with only Puff flex encountering any problems, as some of the sweet white chocolate pasties had quite a bit of leakage and therefore could not be sold. Gumdrop buttons, worked excellently together and produced high volume of consist cupcakes, very good collaboration. The Baking Boys produced a high quality luxury product which they then cleverly packaged.
At the winter fare The Baking boys sold out first with there 35 portions of brownies being very popular,The Cupcakes being sold for $10 each sold at steady pace and eventually sold out, but the pasties, didn’t quite sell out and they had a bit of waste from the exploded chocolate pasties.
All profits were going the Masarang Foundationon and after they had repaid their $300, paid their stall rent the final totals were

This makes The Baking boys the winning team in terms of profit, but Gumdrop Buttins, won the teamwork award.
Chef of the Week – Mrs Irwin
This week’s Chef of the week is not a student, as I felt Mrs Irwin, the Food technology Educational Assistant, deserved the recognition, as she spent her spare time working on molding and modelling an orangutan out of icing, to be displayed on the Masarang stall at the Winter Fare. It will be auctioned off for the charity at the end of the fare.
I am sure you will agree it is work of art. Thank you for all the hard work, time and effort you put into making it.
Group 4 IB – Science/DT/FT Exhibition
In our 1st week back after the summer break the Y13 pupils were divided into 16 groups, each with 9 pupils in. Each group was then given a myth busting brief to work on for two days, to maximise teamwork and the range of talents in the group throughout the different sciences and DT subjects. This culminated in the groups presenting at their display stands in the expo, which had people walking on custard, sampling fudge, ice cream and pineapple jam, videos of exploding coke bottles. The winning group was able to explain the best way to keep the fizz in your champagne (very handy)!
A very impressive and creative start to the new term.
Urban survival – Composting from FT helps to grow delicious food.
On Wednesday 18th June Mr Davis brought his Elements Urban Survival class to Food Tech, to make food using ingredients that they had grown at school, or sourced locally. A tricky challenge in Hong Kong! There were a range of lovely salads made, using cucumbers leaves and herbs grown at school, stir-frys and a great fish dish really stood out. It was lovely to see food being grown, using compost material from the classroom and used at school. This is such a great experience for students to take part in.
ESF Masterchef Final
On the 13th June the 2nd ESF Masterchef Final took place, at King George V school.
Pupils were give the brief of Iconic Hong Kong and asked to use their creative flare to interpret this how they wanted and they would have one and half hours to make their dish.
Representing island school for the Juniors ( working in pairs) was Kaela- Mei Townson (9W) and Melodie Karbassian (9W). They decided to show the history of Hong Kong on plate, with the British influence of fish cakes and chips, Japanese Teriyaki Salmon skewers and Crab spring rolls. these were represented don a long plate, with the dishes growing in height to represent that growth of the sky scrappers along Victoria Harbor.
jason Lim (10R) was Island school’s competitor for the Seniors and he decided to make a East/West Fusion of Chinese Spiced Rack of Lamb, with hairy melon stuffed with “lucky mushrooms,” served with hoe made Pasta with mint pesto. he certainly gave himself a challenge but he completed with time to spare.
The judging was very close, with the Island school competitors coming runner up to Sha Tin College in both sections.
Well done to to everyone who took parts, the standard of food was amazing and could have graced the best restaurants in Hong Kong

Y13 Graduation Canapes
As part of the Y12 IB design Technology (food) course students were given a coursework task to plan, design and make 200 canapes each fro the Y13 Graduation .
Pupils did an amazing job and made perfectly uniform and was thoug hout canoes
1. Butternut squash and feta crostini
2. Pesto and balsamic tomato puff
3. Steak and salsa Tostada
4 Prawn and Avocado Wasabi Rice cakes
5. Mini Banoffe Pies
They all went down a storm and got fantastic feedback from staff, parents and pupils.
It was great to have such an authentic experience for the pupils to work on.
Cross Curricula Observations – Ms Tirasina (6 Hat Thinking)
Thanks to Ms Tirasina in Business studies, who allowed me to come and get idea’s on researching techniques for using in Design technology lessons.
The focus of the lesson was using 6 hat thinking to investigate the marketing mix of 2 different companies (one service and one product, eg. Cathay Pacific and Apple)
I learnt that there are many different ways of using 6 hat thinking. different students can have a hat each and take on that role for a specific task or students can be given a set of hat s to use to investigate.
The main thing that pupils told me was that had realized after using this techniques for research and investigation, that it is important to consider each hat and not just one. For example it would be good to just be a white hat, without considering emotions and having a red hat on. It is therefore important to have a bit of each hat in you thinking skils. I will definately be using this in DT lessons soon.
History of Food in Hong Kong
On Wednesday 30th April Mrs Thomas brought her Y10 class to the food room to make their products and do their presentations on the Foods that represent the history of Hong Kong.
Pupils were really well planned and prepared and their final presentations were really interesting., but more importantly the food was delicious. There was great range of traditional Chinese mixed with a few British and some others, but my favorite was the Porterhouse egg tarts.
