Lord’s Kitchen visit ICON Hotel

a Big thank-you to everyone at ICON Hotel that put on a great visit for the Lords Kitchen students this week. Getting to go behind the scenes and follow the flow of food around the different food preparation areas was great and the cooking demonstration was great in the training kitchen –  the best lemon and poppy seed muffins ever. This was then topped off by having the fantastic lunch buffet at the market garden, with so many amazing foods to sample.

Lords Kitchen – Skills Communication project

As one of the final pieces of work that the pupils have done for this course, they were asked to create a piece of media to communicate skills and recipes to amateur cooks. We had some excellent videos, magazine articles and digital media

Below are some of the best ones – I’m sure u\you wil agree we have a couple of TV chefs in our midst

Dear Chefs extraordinaire,

many thanks for the work you put into today’s lunch. The students were wonderful and the food fantastic. It was the icing on the cake of a great day, and as some guests said really showed what we mean by authentic learning.
Please pass on my sincere thanks to your students. They were great.

Lord’s Kitche Creative Challenge – Deconstructed desserts

Lord’s Kitchen got creative today, with the deconstructed dessert challenge. Pupils could work independently, in pairs or tris to produce their take on a classic sweet food and the results were on the whole very impressive with just a couple of mistake that they will learn from. There were takes upon  Black forest gateaux, apple pie, lemon meringue pie, but the stand out was Ethan Li and Brita Cheng for the their version of bubble tea, they are this weeks chefs of the week

Deconstructed dessert practice

In todays lesson I made several components for a lemon and berry cheesecake. Students then could play around with designing a deconstructed plate of the dessert.

Well done to these three star chefs who worked independently in Lord’s Kitchen to create professional pasta dishes. They could have be sold at Jamie’s Italian very easily!

Pasta week in Lord’s Kitchen

This week saw students being creative with pasta and used their prior knowledge from sauce week. For all students it was the first time they had made homemade pasta and the results for these novice chefs were remarkable, with a great range of dishes including presto tagliatelle,  mushroom tortellini and spinach and ricotta ravioli . Very successful lesson with lots collaboration and confidence building
