Sweet Indulgence pastry weeks – Star Bakers (Natasha, Henry, Chiara and Natalie)
In the Sweet indulgence pastry weeks students were able to make whatever shortcrust pie or tart they wanted and then following week they could make anything with choux pastry. This was a serious test of their technique and skill in the closing weeks of the course can the standard was high as they battled it out ofor the last star baker awarrdIn the end Natasha won for her superb mango Cream Pie, Henry and Chiara for their proficiency in making eclairs and Natalie for her creativity and challengong herself in making choux pastry swan.
Puff Pastry Challenge – Star bakers: Gwen, Chiara and Cheryl
Today was the Puff Pastry Challenge in Sweet Indulgence, with students being retired to make their own dessert. This was a “Bake Off” style competition with Ms Jolly and Mr Lord judging on the most professional appetizing presentation. Star Bakers were Gwen, and Chiara for their Mielle Feuile and Cheryl for heart shaped apple turnovers
Cupcake Wars, Star Bakers Natalie, Jisoo and Raphael
It was that time of year again, when Cupcakes Wars took place it Sweet Indulgence and wow was it good! The theme was fruit and piping skill was high after last weeks course at Complete Deelite. The three Star Bakers were chosen because their cupcake looked most like the the ones I would expect to see in a professional bakery, so well done to Natalie, Jisoo and Raphel.
Sweet Indulgence – Sponges (Star baker – Natalie, Jisoo and Tatjana)
This week Sweet indulgence made sponge cakes to see which could be sold at a cake stall for the Island 50 festival. Student owned their owned learning by choosing and planning their own cakes. Their were a lot of tasty treats tyo sample at the end, but the star bakers with the best and most suitable cakes were, Natalie with her Devils Brownies, Jisoo for her Honey and rosemary loaf cake and Tatjana for her mini lemon drizzles.
Sweet Indulgence Visits Complete Deelite (Star Bakers Flora and Haruki)
The Sweet Indulgence elements class went to Complete Deelite this week for the advanced piping skills workshop. After a series of demonstrations the students were given a cake and told to be creative with their decorating whilst showing off the different Techniques. You could have cut the tension with a knife during the hour they had to decorate, with Jackie the instructor, deciding on her two favourites at the end. After much deliberation she decided that Haruki, had shown the most patience and skill to master the basket weave technique and Flora had come up with the nicest design, well done to these star bakers and to everyone as there were a lot of high skill on show. Also many thanks to everyone at Complete Deelite for making it such a great experience
Week 3 Chocolate – Star Bakers (Viva Sheth, Cheryl Chin and Bakhita Fung)
Chocolate week is always a hub of creative excitement and this time was no different. The range of bars, filled chocolates and chocolate cups was amazing, with marshmallows, biscuits and gummy sweets being used tgo make their product more funky. My favourites were the coconut bar and the strawberry fizzy fileld chocolates, but the star bakers were to Bakhita for attractive packaging and Viva and Cheryl for their Earl Grey syrup filled bar
Confectionary Own Design – Star bakers (Jisoo Myung and Tatjana Foong)
Well done to Jisoo and Tatjana who became the 2nd set of star bakers this week for their double layered mocha fudge, that they designed. It was a very tough decisiion with pretzel fudge and cookie monster fudge also being very creative.
Sugar and Sweets
Week one in Sweet Indulgence and students were given a recipe to follow to that showed different methods of making confectionery. The results were great and gave the example of how sweets can be of all different textures and levels of sweetness. Star baker went to Natasha Want and Flora Chen who made lovely, light and fluffy Marshmallow
Panna Cotta presentation challenge – Star bakers: Nelly, Emma and Elena
In this weeks Sweet Indulgence I made panna cotta and a selection of coulis and other item that the students could then be creative with in designing a stylish plate to present their dessert.
The Star bakers had a eye for detail and were all very different. So well done Nelly, Emma and Elena
Choux Pastry Week – Star baker Paige Willis
This week was probably the hardest yet, with the choux pastry challenge and the results varied in success. Some students got a better a puff into their pastries than others, but there were some amazing profiteroles and eclairs made.
Star baker goes to Paige Willis though as her profiteroles were creative with raspberry ream and raspberry floured white chocolate coating, as well as being all perfectly uniform.
