Pies and tarts – Star Bakers Wai Lam Yau and Rohan Khemchandani
Shortcrust pastry was the starting point for the students this week and after flipping the classroom the students could plan to make any pie or batch of tarts. The standard was high as usual, but this week the star baker awards went to Wai lam for her amazing fruit tarts with home made creme patisserie, as she worked so methodically to them and to Rohan for his determination to get his chocolate gnache tarts made to look all uniform.
Sweet Indulgence Cupcake wars – Winner Avantika and Olivia
This week the student were pitted each other in cupcake wars, with the brief to make fruits cupcakes. the class produced amazing cupcakes all uniform and beautifully presented and any would grace the best bakeries in HK. It was really hard to pick a winner but eventually we choose Olivia (now 4 times star baker) was she made her own curd and meringue to decorate the lemon cupcakes and Avanitka for her great flavoured and neatly decorated pina colanda cupcakes
As you can see though they all looked great
PUFF PASTRY WEEK – Star baker (Wai Lam Yau)
This week in Sweet Indulgence we were working with my favourite standard component, frozen puff pastry. As you can see there are many bakery ready products that the students made, but Wai Lam made hers most efficiently way and could be served in most high class restaurant
Star baker Olivia Gough in Biscuits week
Well done to Olivia who was awarded star baker for making a perfect batch of uniform Spiced pumpkin biscuits that were the most interesting and tasty out of all the class, although there were lots of other delicious treats to sample
Sweet Indulgence Sponges – Star Bakers (Justin and Wai Lam)
In this week students were given the basic ingredients to make cakes and they then brought in the extras to make their cakes amazing. This gave students plenty of scope to be creative with flavors and shapes, but the two star bakers concertated on getting g the sponge perfect and doing really neat decorating
As you can see though there were lots of other delirious treats on display
Sweet indulgence – Enriched Bread Doughs
This week in Sweet indulgence we made enriched bread soughs to learn about the yeast and gluten, whist getting to m ake some delicious products. We had an array of different Chelsea Buns, Iced Fingers and doughnuts to show for all the hard work kneading and proving.
The star bakers were named for the more efficient/organised working practices with the best end product: This went to Hannah Olson and Emma Lu
Lords Chocolate factory
Today my Umpla Lumpas in Sweet indulgence were tasked with making their own chocolate bar or batch of filled chocolates. The outcome were fantastic with a great range of interesting bars and some very professional filled chocolates.
Avantika Malhotra and Esha Gidwani were awarded star baker, for doing the most accurate tempering and getting the shiniest chocolates
Confectionary week – Star baker (Niamh Tait)
Well done to Niamh who made the perfect vanilla fudge in the confectionery week of Sweet indulgence. It was sweet and creamy and had the perfect texture.
There was lots of other really good products madce that would be perfect Ye Olde Sweet Shop, such as peppermint creams, cinder toffee, coconut ice, Jelly sweets and many other fudges.
Sweet Indulgence, chilled desserts
This week saw pupils experimenting, with cream, setting agents and methods of aeration, whilst making chilled desserts.
There was a good range of high standard treats on offer including, cheesecake, mousses, panna-cotta and creme brulee with most of the presented to a restaurant standard.
Star bakers had to go Lauren Mclean with her crowd pleasing Oreo Cheesecake and (for the third time) Christie Chong for her layer panna-cotta with strawberry jelly and red pulled sugar.
