Chef’s of the week
This weeks chef’s of the week, came from Mr Lord’s Sweet Indulgence class, where pupils were given an intense skills challenge to make Lemon Meringue Pies.

Cake pops
This week in sweet indulgence students made Cake pops. This was a relaxed welcome wind down to this half term. Although the cake pos themselves are easy to make, students enjoyed decorating their adorable creations. We saw a lot of imaginative and original designs. Some students used melted chocolate, various sprinkles and butter icing to finish off their designs yet others preferred to challenge their manipulative skills by using fondant.
Cupcake wars – Sweet Indulgence (week 6)
This week, students were engaged in yet another exciting challenge – cupcake wars. They worked in pair to make and decorate a batch of cupcakes. It was interesting to see creativity at work here. We saw many students using the decorating techniques they learnt from our recent trip to complete deelite. Many used a lot of interesting colours and flavours to finish off their cupcakes. When all the cakes were decorated, students were asked to present four of their cupcakes. The class then voted for the overall best cupcakes. Connor,Smriti,Rachel and Jenny worn the title of bakers of the week this week.
Capturing your sweet indulgence – Trip to Complete Deelite
In week 6, the class took a trip to Complete Deelite, where they took part in an Advanced Piping Skills workshop. The Wilton trained instructors demonstrated a range of piping skills, using different techniques with different nozzles. Then students were given an opportunity to put what they had learnt into practice. Each student was given their own cake to decorate. When Mr Lord announced that he was looking for the best cake decorator to crown chef of the week, there was a lot of excitement, with every student trying their best to create a design worthy of the title. In the end, the decision was left to the instructors to choose the winner. This proved to be a difficult decision even to our instructors, because there were so many beautiful and creative designs. Eventually, Farrah Ullah’s cake was chosen best for the range of different techniques she used and her professional finish. Claudia Lau’s cake was chosen for her consistency and the overall design. Aiden Kent’s cake was chosen as the best cake among all the boys. Although only three people came out tops, everyone put a lot of effort into their work and they produced some fantastic designs. Students were also commended for their good behaviour. Well done everyone that went on this trip.
Capturing your Sweet indulgence – Chocolate
As the name of the course suggests, students captured their sweet indulgence in week 4 and week 5. They made chocolate bars and filled chocolates.
Students were shown the technique of tempering chocolate and how to make and fill their own chocolates. We saw some very creative work on this task with some students infusing different flavours into their chocolate bars and yet others trying out different colours and textures. But this was not all, students were also given the challenge to design their own chocolate wrapper. This was an enjoyable task for many because they got to test their creativity by thinking of suitable designs for their wrapper which matched the chocolate they just made.

Chef’s of the Week
This week the Chef’s of the week were chosen from the two Sweet Indulgence Elements, after they had completed their cake decorating on the Advanced Piping Skills, workshop at Complete Deelite. There were so many students that could of been choosen, but the Wilton trained instructors were ask to make decision on which they thought were best. After much deliberation, Claudia Lau was chosen for her consistency and design, Farrah Ullah for the range of different techniques and professional finish and Aiden Kent was the best of the boys, with a lot of intricacy in his piping.
Sweet indulgence – Fudge and Sugar work
In the first week of sweet indulgence students learnt about how sugar was made/processed, the different types and the negative consequences of eating too much sugar. Taste testing was also done to find the favorite types of sweets and I showed pupils how to make honeycomb/cinder toffee.
In this 2nd week, pupil got the opportunity to make their own fudge and we saw some inserting flavors; Coconut and popcorn, Marshmallow and crackers, peanut butter, chocolate orange and Oreo. Pupils also had to brand their fudge by decorating a blank net and work out how many calories there is the fudge, using a nutrition program.
This was all finished off with a demonstration on spun sugar and sugar work, to wow the students
