Magic Seasons Organic students talk
A massive thank you to Alvin Kwong (Class 2007 alumni, Fleming) from Magic Season organic, who came in to give a talk to the Y12 IB Food Science students.
Magic seasons is an organic vegetable box company that delivers a vegetable box full of fresh, organic vegetables to your home, consisting of what ever is in season. The students were really engaged during the question and anweer session, which focused on, what is organic farming and hwo this can be diferent in different countries, the logistics of running such a company, the issue of food wate in HK and how we might combat it, sustainable packing and lots more.
Hope fully Alvin we will back in school soon,m as we are keen to link up on some future projects
Y13 BTEC Pop Up Restaurant – Niam
On Tuesday 24th April the Y13 BTEC Hospitality students opened their pop up restaurant for one night only, which they called Niam! This was for their final unit where they have to plan, organised and run a catered vent. they decided to open an East meets West fusion restaurant to celebrate Island School moving to Sha Tin Wai. All the menu incorporated European syles with local Asian ingredients. There was a total of 63 paying guest at the evening and the feedback from them was superb. The Y12 Hospitality student were the waiting staff for the event, which they counts towards their customer service unit. all the students should be extreme;y proud of themselves for pulling off such a high quality fine dining event. Many thanks to everyone who came and supported the event, it was great to have so many people there.

Complete Deelite Piping Skills workshop – Star bakers Olivia, Natalie, Vanessa
Today the Sweet Indulgence class visited Complete Deelite to do the advanced piping skill workshop The Wilton trained instructor demonstrated how they make their cakes and then wowed the student with the different piping techniques. Students then had an hour to practice the skills and then add a base layer of buttercream and then design the decorations. Well done to the the winning students who the instructor picked out. Olivia hoe a creative underwater theme, Vanessa for her concentration and working quickly and Natalie for her perfection of her large swirl technique
Visiting Dietitian talks to the new IB Food Science students
Many thanks to Denise Fair (IS parent), who very kindly came in today to talk to the Y12 students studying the new IB Food Science course. Denise has been a qualified Dietitian for 15 years and has been working in Hong Kong for 10 years. She gave a really informative and interesting question and answer sessions with the students on teenage dietary requirements and current diet related issues and trends. this will be very help to students, as they have just formed the IS healthy Food Group as a CAS project and will be doing lots of work around school linked to making good food choices throughout the year. Hope Denise will be coming back at some point later in the year to give talks to parents and other students, so keep you eyes pealed for more details
Y12 BTEC Hospitality students produce amazing canapes for the Y13 Graduation
Y13 BTEC Hospiality Final Event – Island Sessions meal
As part of the final module in the BTEC Hospitality course, the student collaborated with some of Mr Travers’s music students to put on an evening of British food and acoustic music. The student were all delegated different roles both in the kitchen and in the organisation of the event, including communication, finance, decoration,etc..
The menu was all deigned and planned by the students and they enlisted the Y12 Hospitality students to wait on the guests. The evening was a huge success with many compliments about the food service and performances. All the students involved should be very proud of themselves, as they have come along way since beginning the cpourse less than two years ago and now are very professional in the kitchen and font of house.
Thanks to all the students and staff involved and to all the guests that supported the event and made it such a success.
Lord’s Kitchen HE Fair Buffet
The Lord’s Kitchen course culminated in them putting their skills and knowledge together to plan and prepare a finger food buffet for the visitors from all the Universities that were at Island school for the Higher Education Fair,
The was a vast selection on offer, including Mini Salmon Wellingtons, Vegetable Samosas, Chilli Beef Burritos, Falafel Wraps and Chocolate Pancakes with Strawberry Sauce. The students collaborated excellently all day and were very professional in the service, getting a lot of praise from all the visitors. Well done to all of themand I hope see them on the food courses in the future.
IB Food students visit Nood food for an expert appraisal of their final products
Today the IB Food students, Claudia and Tiff visited Nood food head office in Central,for an expert appraisal of their final products. Tiff had designed a Oat, Chia, Mango, Berry Energy bar and Claudia a vegan/gluten-free spiced pumpkin tart. Nood Food’s Head innovation chef Moises kindly gave up his time to feedback on the products and see the improvements they had made since he appraised them in the development stage. The constructive feedback will really help them finish their major projects and he suggested lots of constructive ideas for further developments. The students said “it was great to make the project more realistic and, like we had a start up business”.
