Cupcake Wars Winners – Charlie and Diya

Sweet Indulgence had a fruity theme for the cupcake wars lesson this semester and there were some very profession ally decorated products on display. Though the Y12 student judges decided they were most likely to choose Charlie and Diya’s cupcake, if they saw them in a shop, so they were awarded Star baker this week

Sponge cake Stra baker – Andrea, Valerie, Elizabeth and Charlotte

Sweet indulgence sponge cake week gives a l ot of scope to try out different ideas after students learn about the function of the cake making basic ingredients.  The winners stepped up the creativity with Valerie, Elizabeth and Charlotte collaborating to make a superb greedy unicorn cake. Also Andrea ws awarded the accolade for her unique take on a marbled chocolate and banana loaf cake, which was a absolute delicious.

 

Chilled dessert presentation challenge – Star bakers (Katya, Maria, Henry, Valerie, Charlotte and Emma)

Today in sweet indulgence was a test of the students artistic plating skills. they had to make either cheesecake or panna cotta and serve it with a sauce and garnish and then do three different plating styles. They then decided which was the best presented and put that through to the final judging. Ms Walsh and Ms Lucas Timpany came in to judge the desserts and decided that Katya, Maria, Henry, Valerie, Charlotte, Emma had produced the dishes to the most professional standard and were all awarded star bakers

 

Shortcrusyt week – Star bakers Charlotte, Valerie, Maria and Jacklyn

Well done to  Charlotte, Valerie, Maria and Jacklyn, who were awarded Star baker  today in Sweet indulgence for their excellent pastry work, making different pies and tarts. Maria showed creativity with her blueberry, apple and fig crumble tarts, Jacklyn precision with her rose apple arts and Charlotte and Valerie had Michelin star presentation.

 

Choux Time Star Bakers – Jacklyn, Charlie, Elizabeth, Valerie, Lisa and Audrey

Sweet indulgence took on the Choux Time challenge this week. All students were given the same basic choux pastry recipe and the students had to+decide on size, shape, fillings or decorations. There were profiteroles and eclairs galore and deciding on Star baker was very difficult, but eventually Doris Chan and Mr Lord decided Jacklyn had the best rise to her pastries, Charlie, Elizabeth, Valerie had the most creative flavor with their pretzel, chocolate and salted caramel and salted and Lisa and Audrey and the most attractive decoration

 

Chocolate week – Star bakers (Henry, Mohit and Charlie)

Sweet indulgence got semester 2 off with air of excitement , as students designed their own chocolate bars. After learning about chocolate tempering the students decided on the combination of while, milk or dark chocolates and the additional ingredients they anted to add to their bar and then designed a wrapper to brand their bar. Well done to  Henry, Mohit and Charlie who were awarded star baker this week, for their best wrapper design.

Its all about the dough!

The sweet indulgence course for the semester of Elements culminated in with enriched bread dough, with students making a selection of doughnuts, cinnamon rolls and churros. I was great to see how the students had developed their skills and creativity over the last  few months of this course and they loved this final practical.

No stra bakers this week, because everyone was so good!

BTEC Community afternoon Tea

A massive congratulations to all the BTEC hospitality and in particular the Y13 students who plan, and managed the entire Afternoon Tea event. The students developed the idea to invite senior citizens from the local community, after some teachers ahd gone on a community walk and met some of the people. the students worked with Raymond Li, the Tai Wai councilor as a client to come up with event proposals and then designed the menu accordingly to ensure theire a good mix of asiain and western flavors. The Y13’s were responsible for the all the sweet products and the Y12 students made all the savourty items.

 

there were 40 senior citizens and 30 teachers at the event  and the food, service and entertainment were all absolutely amazing. All the senior citizens were so appreciative of the thought and effort that had gone into making them feel welcome and it really helped to make Island school feel more part of the local community.

If the Choux Fits – Star bakers (Rachael, Sarrah, Prekesh, Emilie, Emisa)

This week in Sweet Indulgence was all about chop. Students had to make a  batch of cream puffs using the same recipe and then differentiate by accuracy and presentation techniques. Doris Chan the students teacher made an amazing croque-en-bouche to show how to elevate the product to high class bakery standard

The standard of final results was the best so far form the entire class and Ms Leung found it really difficult to choose her favorite, but went for the students who had put the most detail into the plating. Well done to Rachael, Sarrah, Prekesh, Emilie, Emisa who won the star baker award
