Sweet Indigence @ Complete Deelite – Star Baker Theresa Knight

In todays Sweet Indulgnec lesson the class took a trip to Complete Deelite to do and cupcake icing and mochi making workshop. The class was really inactive with student watching and volunteering to assist in the demonstrations and then getting to decorate their own cupcakes and then make their own filled mochi. This was an enjoyable challenge for the students who were striving to use all the techniques they had been shown. The instructor decided that Theresa,had by far and away decorated her cupcake the best and was awarded Star Baker!

Island School visits Yorkshire in Quest Week

During this years Quest Week, 21 students traveled to Yorkshire to experience the food and culture. The trip involved a great mix of activities. that gave them in insight into the history of the area and gave them the chance to indulge in the local cuisine. The cultural experiences included; the Jorvik Viking Museum, Eden Camp 2nd World War Museum, York Dungeons, The National railway museum, Whitby abbey, where Dracula was set and hiking on North York Moors. The foodie activities included visiting many restaurants and meeting the chefs,  cooking at Malton cookery school, cheese tasting at Shepherds Purse Creamery, visiting a diary farm and petting 2 week old calves  and learning about York’s chocolate heritage.   The students had a fantastic time and loved the week away in Gods own country.

 

 

BTEC trip to Oolaa,

the year 12 BTEC students had the pleasure of breakfast at Oolaa’s, in Central. Not only did they get to enjoy the food, but they also got to interview Malcolm, who is one of the owners of the entire Castello concepts group. I gained a great insights into the inner workings of running a restaurant business in Hong Kong. Thank you very much to Malcolm on the staff at Oolaa, for being so accommodating and helping the students with the hospitality/business units

Year 12 DT students visit IFI(HK)

The Year 12 IB Design Technology class visited IFI(HK) to investigate the importance of innovation in toy design. Students had the opportunity to test and evaluate a range of toys and robots.

Complete Deelite Piping Skills workshop – Star bakers Olivia, Natalie, Vanessa

Today the Sweet Indulgence class visited Complete Deelite to do the advanced piping skill workshop The Wilton trained instructor demonstrated how they make their cakes and then wowed the student with the different piping techniques. Students then had  an hour to practice the skills and then add a base layer of buttercream and then design the decorations. Well done to the the winning students who the instructor picked out. Olivia hoe a creative underwater theme, Vanessa for her concentration and working quickly and Natalie for her perfection of her large swirl technique

 

Complete Deelite Advanced Piping Skills class – Star Baker Chris and Natalie

This week the Sweet Indulgence class visited Complete Deelite to do the Advanced Piping skills workshop. This involved being shown how to make professional standard cakes and do a crumb coasting, before being shown lots of different piping techniques, before being let loose with their own cakes and an array of colours of butter cream and piping tips. The student then had 1 hour to create their on decorated cake masterpiece .

As you can see the student were in the zone and the results were fantastic

Well done to Chris and Chris and Natalie who were awarded the star bakers by the the two instructors, for the best designed cakes with the highest level of skill

 

BTEC Hospitality trip to MJRVR Thailand

Well done to all the Y12 BTEC Business and Hospitality students, who had a very busy and productive week at Maekok River Village Resort in Northern Thailand. They learnt all about the business and finance of running a luxury resort and education centre, they interview different department heads and how they ensure excellent customer service. They then took part in several practical activities including visiting a local market and cooking lunch for the 100 students staying in the education centre, role pays of dealing with angry customers and giving information about the activities available and learning how to make up a room for guests checking in. As well as this they, took some of the local culture hiking to a local hill tribe and temple  and participated in different team building activities.

 

IB Food students visit Nood food for an expert appraisal of their final products

Today the IB Food students, Claudia and Tiff visited Nood food head office in Central,for an expert appraisal of their final products. Tiff had designed a Oat, Chia, Mango, Berry Energy bar and Claudia a vegan/gluten-free spiced pumpkin tart. Nood Food’s Head innovation chef Moises kindly gave up his time to feedback on the products and see the improvements they had made since he appraised them in the development stage. The constructive feedback will really help them finish their major projects and he suggested lots of constructive ideas for further developments. The students said “it was great to make the project more realistic and, like we had a start up business”.

Hong Kong Culinary academy visits

This week the Honk Kong Culinary academy hosted three different classes to give them an insight of what it is like to work in a industrial kitchen and with a professional chef. On Monday the new BTEC  Y12  Hospitality students were taught the key steps when making risotto and made theirs with 3 types of tomato. Then on Tuesday the Y13 Hospitality students learnt all about pasta making and how to make the perfect sauce to accompany it and then make their version of seafood and tomato linguine. Then on Wednesday the Lord’s Kitchen Elements class really enjoyed learning how to make a felicitous Spanish citrus rice pudding, with tulle biscuit. Thanks to everyone one at the academy and I am sure it will be a great place for higher education for anyone interested in culinary arts and hospitality
