Chilled dessert presentation challenge – Star bakers (Katya, Maria, Henry, Valerie, Charlotte and Emma)

Today in sweet indulgence was a test of the students artistic plating skills. they had to make either cheesecake or panna cotta and serve it with a sauce and garnish and then do three different plating styles. They then decided which was the best presented and put that through to the final judging. Ms Walsh and Ms Lucas Timpany came in to judge the desserts and decided that Katya, Maria, Henry, Valerie, Charlotte, Emma had produced the dishes to the most professional standard and were all awarded star bakers

 

Bradbury students come to meet an expert

Today the food department had the pleasure of working with two small groups of Y6 student from Bradbury school, who were doing work preparing fro their exhibition in two weeks, One group was looking at healthy low sugar products and made their own ChocPro ball, from different dried fruits and seeds and the other group were investigating cultural foods and made mini pavlovas and could tell me all about the origin of the tasty dessert. . They were all; very grateful or their help from their expert, Mr Lord and feel a lot more uprepared fore the exhibition now.

 

Shortcrusyt week – Star bakers Charlotte, Valerie, Maria and Jacklyn

Well done to  Charlotte, Valerie, Maria and Jacklyn, who were awarded Star baker  today in Sweet indulgence for their excellent pastry work, making different pies and tarts. Maria showed creativity with her blueberry, apple and fig crumble tarts, Jacklyn precision with her rose apple arts and Charlotte and Valerie had Michelin star presentation.

 

Eggs Benedict Challenge – Chefs of the week Stephen, Claire, Yanisha and Jennifer

Well done to Stephen, Claire, Yanisha and Jennifer who were awarded chef of the week in Lords Kitchen this week for having the best working practices and the best presentation of their eggs Benedict

ESF Chef Semi Final 2019 – Seniors

The Brief for this years ESF Chef Semi Final 2019 was modernised street food, giving the contestant a vast scope of potential foods they could cook and we got a mix of sweet and savoury from all over the world, corn dogs to faux shark fin soup.

   

The judges loved the way the students approached the brief and each dish had strengths and weaknesses, but they had to decide on the three finalists for the 3rd April.

In 3rd place was Victoria Van De Pol (N) for her Greek doughnuts

2nd place was Wai Lam Yau (N)  for her Lammingtons

and winning again was Charlotte Wong (W) for her Fruit Tacos

Choux Time Star Bakers – Jacklyn, Charlie, Elizabeth, Valerie, Lisa and Audrey

Sweet indulgence took on the Choux Time challenge this week. All students were given the same basic choux pastry recipe and the students had to+decide on size, shape, fillings or decorations. There were profiteroles and eclairs galore and deciding on Star baker was very difficult, but eventually Doris Chan and Mr Lord decided Jacklyn had the best rise to her pastries, Charlie, Elizabeth, Valerie had the most creative flavor with their pretzel, chocolate and salted caramel and salted and Lisa and Audrey and the most attractive decoration

 

IB food students visit bread elemnets Bakery

Many thanks to Gregoire at Bread Elements for the amazing tour of the factory and the amazing pastries. The IB food Science students loved learning about the science of bread and croissant making and how this is doen on a large scale using commercial machinery

Y6’s cook school lunches.

we had the pleasure of having the Y6 students from different feeder schools come into the food department for the last two days and cook their own lunch and cook for other students and teachers. They made pasta with tomato and spinach sauce, fresh green salad and garlic bread. this was a really enjoyable experience and many thanks to Magic Season Organics, who donated all the salad and spinach

Junior IS ESF Chef Competition

The 2019 competition kicked off today, with 12 teams competing for a place in the top six spots. Each team was given a mystery box with chicken and four other ingredients of their choice, from carbohydrates and vegetables. With only ten minutes to plan, the teams were under pressure to come up with a dish that would not only impress the judges, but also cook within the one hour time limit. It was impressive to see the varied ideas and dishes that the junior teams managed to come up with. In the end, Natalie and Chelsea scooped the top spot with their Chicken tacos, followed closely by Charlotte and Valerie’s ravioli.

IS ESF Chef 2019 1st round – Mystery box challenge

It is that tome of year again, where the ERSF Chef starts up at Island school. the Senior section saw the students given a mystery box of chicken and some vegetables and then they could choose from a selection of carbohydrate ingredients and they had acces the herbs and spice and dry store basics. Once they had chosen their ingredient they had 10mins to plan and then 1 hour cooking time, before it was judging time. Ms Leung and Mr Woods judged along side some Y13 students and had the very envious job of deciding who goes through t the enxt round. There was a clear winner, with Charlotte Wong from 12W almost getting full marks form all the judges, for her risotto dish and it was close between the next 5 competitors, making the next round very interesting on 1st March
