Just Chilling – Star bakers (Halle, Barbie Emilie)

Sweet indulgence today were making chilled desserts and we ahd huger variety of panna cotta’s and cheesecakes. This was a challenge of presentation and styling and the Halle, Barbie Emilie were awarded Star baker for being the creative and innovative with their designs.

Eggs benedict – Chefs of the week Edison, Yi Shyan and Chloe

Lord’s Kitchen this week, was an introduction to the 5 Mother Sauces and a cook off to see who could make the best Hollandaise sauce and poached eggs. The chefs of the week Edison, Yi Shyan and Chloe, who showed the most professional working practices and creative presentation. It was the first time ever that the whole class managed to make the sauce with noone scrambling the eggs .

Sweet Indulgence v Complete Deelitre – Star bakers (Sarrah, Nicole Yash, Emisa, Emilie)

Today Sweet Indulgence Elemenst5 visited Complete Deelite in Central, to partake in the Mochi and Cupcake decorating workshop. This was as fun and challneging as ever an dthe workshop leaders decided that Sarrah, Nicole Yash, Emisa, and Emilie, showed the greatest range of skills, were the most creative and neatest and therefore are this weeks Star Bakers

IB students inter vied from the SCMP about food issues in HK

Afternoon Delight

Yesterday the Y13 BTEC students were rewarded for their excellent dessert buffet, that they produced at the staff CPD day. They were taken to Hyatt in Sha Tin, where they had the afternoon tea set, so they could research and analysis thew quality of the food on offer and get ideas for their next event, which will be an afternoon tea for the local community, in December.

Food Life skills – Y8 food film project

In Lower school, the Food Tech departemntr has taken a interdisciplinary approach to the teaching and has developed a new life skills couse, that links with different curoculum areas. This first projrect looked a food s\yling and how to make cooking videos, with Ms Word coming in to teach the basics of starting to make a food film.

Y12/13 Food students take over the school catering for CPD day

A massive congratulations to all Y12/13 students, studying food related courses, who made all the food for the staff CPD day on 5th September. All the food was made using fresh ingredients/no processed foods and all the vegetables were supplied from Magic Season Organics.

The Y13 IB food Science students made the breakfast and break time healthy snack and drinks, including Quesadilla, Foccaccia and Hummus, banana muffins, frozen yoghurt and fruit salad and iced tea and milk tea.

The new Y12 Hospitality student were in charge of the roast pork carvery, with roast potato and Yorkshire pudding and poached salmon /salad bar. they were amazing, considering some of them had not cooked in the food room before

The Y13 BTEC hospitality students were working in 3 groups of 4 students and each had been developing their own dessert to serve and they had to make 40 portions. One group made Japenese Lemon cheesecake, with brunt lemon and cream, another made mango and Dragon-fruit Bavious and the final groups made peach Cheesecake. All of these dishes were presented to an exceptional standard and were of amazing quality

In total 120 people served asnd the feedback was unbelieveable, with some staff saying it was the best meal they had ever had at school.

   

Fast Food Culture

 

 

We all love and enjoy fast foods every now and then. But are fast food really good for us? Today, students explored this idea. After watching a clip of the documentary Super Size me to answer the question of a complete fast food diet, they were asked to make their own healthy version of fast food.  Each group made a batch of chicken nuggets, burgers, potato wedges and coleslaw salad. The challenge was to upgrade the standard recipe using any other ingredients that they could find in the kitchen. All teams tried their hardest, showing creativity and good skills throughout. The judges were impressed with the presentation of all the dishes, but felt Charlotte, Elizabeth and Valerie had the edge over everyone with their paprika design.

 

Sweet Indulgence week 1 – Confectionary (Star bakers, Nihaal, Yash, Farhaan and Kingsley)

In the 1st lesson of Sweet Indulgence Elements this terms, the students were put in small teams and were told they were goinbg to develop products for their theoretical  bakery/cake shop. they will be designing logo’s, website, instagram pages, promo videos and much more, over the next term and bit.

In this week students were given a recipe to make a confectionery product and then also made a chocolate, that could be sold on the counter in their bakery.  Well done to Nihaal, Yash, Farhaan and Kingsley , who more perfect honeycomb/cinder toffee and shiny filled chocolates.

A massive thank you to Alvin Kwong  (Class 2007 alumni, Fleming)  from Magic Season organic, who came in to give a talk to the Y12 IB Food Science students.

The students were really engaged during the question and anweer session, which focused on, what is organic farming and hwo this can be diferent in different countries, the logistics of running such a company, the issue of food wate in HK and how we might combat it, sustainable packing and lots more.
