Island School ESF Chef Semi Final

 

In the Semi Final of ESF Chef at Island school, held yesterday, competitors were given the brief of Fabulous fruit in 1 hour, giving them lots of scope for  creativity and amazing presentation. Both the Juniors (working in pairs) and the Seniors were cooing alongside each other this time and atmosphere was tense as the second ticked away and the students worked on their creations.  The judges were really treated with this round, as the dessert produced were superb, however their can only be one winner from each section and they were; In Junior, Rachael and Nicole in (W with their  Strawberries 5 ways and in senior. Charlotte Wong for her Berry Trifle pop rock surprise.

Also joining these students in the Island school final next month is Bridgette and Krisha from 8R and Anya and Jordyn from 9D. In the Senior joining Charlotte is Ethan from 12R and Heather from 12W. the winner of the Island School final will be competition, held at West island school on 26th May. Also a big well done to all the competitors who did not make it to the final, but produced some excellent food and worked really hard in preparing and practicing for the last two rounds

 

Seafood Week in Lord’s Kitchen

This week the students in L0rd’s Kitchen learnt all about seafood classifications and preparation techniques. they were then tasked with making mackrel and potato starter with test their presentation and garnishing skills. They then showed their seafood preparation skills and mass production to make large batches of Paellla, to sell to staff. Well done Jamie and Ofir, who were awarded chef of the week for their team working and efficiency

Pasta Week – Chefs of the Week ( Jorja, Christie, Jasmine and Jennifer

This week the students in Lord’s Kitchen were tasked with making homemade pasta and sauces, building on the knowledge of teh Mother Sauces. This proved morec tricky and tiring than most students first thought, but they showed perseverance and all  managed to produce a high quality dish. However the 4 studenst that really excelled were Jorja (10W), Christie (11E), Jasmine (11E) and Jennifer (11F)

 

Chefs the week – Eggs Benedict Challenge

Well done to Natalie and Alyssa in 11F and Chloe and Chloe and Anna in 11N, who were awarded Chef of the Week in t Lord’s Kitchen this week, for winning the Eggs Benedict challenge, after making perfect hollandaise sauce and poached eggs.

Y11 GCSE Food – Presentation Challange

Today the GCSE Food class, was challenged to make a and present,  a panna cotta, to a  restaurant stand. They were give a range a sauces,  fruits and garnishes and at the end of the lesson Mr Lord, Doris the Food Technician and Jess White form the Y13 Hospitality class, all chose their favourites.  Well done to Momoka, Krishna and Natasha, who were nicked for their professional presentation.

Lord’s Kitchen – week 1 Omelettes

The new Elements class began the course with the omelette challenge, which tests students organisation, working practices and heat control on the hob. After working in pairs to make their omelettes, we all judges them and decided which were the most professional looking. The winners of the first Cjhef of the week award went to Natalie/Alyssa and Chloe and Anna, as both pairs made restaurant standard dishes

After this we then started to look at knife skills and we made a batch of carrot and coriander soup, that served 100 people

ESF Chef – Round 1

Just before we broke up for CNY, the food rooms are buzzing with excitement as the first round of the newly named ESF Chef took place.

The Juniors work together in pairs formed with in their houses from Y7-9, with each house selecting 2 pairs were given the brief to make a funky vegetarian dish in 45 minutes. This gave great scope for creativity and some superb dishes were produced, including a  tofu 4 ways, quesadilla, bean burger, and pasta dishes

 

However the winners for the first round were Yash and Alessandro (9W) (Last years ESF Junior overall winners, who make a curried tofu filo parcel

Also going through to the next round in 2nd place is Rachel & Nicole (9W), in 3rd place Bridgette & Krisha (8R), in joint 4th place Jordyn & and Anya (D)/Natalie and Tricia (7F) and in the final spot top sneak through was Alina & Leone (8E)

The seniors were up next working individually, with the the simple brief of the perfect risotto in 45minsnt there was no room for mistakes and Charlotte in 10W ran awaty with teh win, as she not only made the best risotto, but it was also garnished with Parmesan crisps.

It was then close for the next 5 places in the next round, but well done to Dan (12F) who got 2nd place, Kelly (12E) nad Erika (12F) who got joint 3rd, Ethan (12R) in 5th and Heather in 12W in 6th

The next rounbd is on 15th March and students now have an hour to impress with a fruity dish

IB Food students visit Nood food for an expert appraisal of their final products

Today the IB Food students, Claudia and Tiff visited Nood food head office in Central,for an expert appraisal of their final products. Tiff had designed a Oat, Chia, Mango, Berry Energy bar and Claudia a vegan/gluten-free spiced pumpkin tart. Nood Food’s Head innovation chef Moises kindly gave up his time to feedback on the products and see the improvements they had made since he appraised them in the development stage. The constructive feedback will really help them finish their major projects and he suggested lots of constructive ideas for further developments. The students said “it was great to make the project more realistic and, like we had a start up business”.

Creative Dessert Challenge

This week, Lord’s Kitchen students were put in random groups with random sweet ingredients and were given 2 hours to make a fine ding dessert. We saw a selection of ice-creams, mousses, crumble, waffles, cheesecakes, doughnuts, purees and garnishes being made after the student had spend 15mins brainstorming. It all then started to come together for the individual plating and presentation. Mr Rappel came top judge the work and decided on the best group, being Alex, Justie and Alicia and the best overall presentation to Momoka and Chiara P. well done to these Chefs of the Week

Lord’s Kitchen Week 6 Pasta week – Chefs of the week Chiara, Natasha, Ian and hannah

Pasta week in Lords Kitchen saw some serious skill, with many students challenging themselves with ravioli making and complex sauces, on top of making and rolling their own dough. Chefs of the week went to Hannah for researching an innovate way of making ravioli, using a chocolate mould, Ian for making the best tagliatelle i have tasted in years and Chiara and Natasha for their professionally made ravioli using homemade ricotta and homegrown basil
